This decaf comes from Caldas, Colombia, one of the country’s historic coffee-producing regions and part of Colombia’s celebrated coffee-growing axis. Known for its mountainous terrain, rich soils, and long coffee tradition, Caldas produces coffees with sweetness, balance, and approachable structure.

In this decaf, we roast to highlight the comforting side of the cup: soft chocolate sweetness, caramel-like depth, and gentle warming spice. The result is a decaf that feels familiar, polished, and satisfying without tasting flat or muted.

Swiss Water Process (Chemical-Free Decaf)

This coffee is decaffeinated at the Swiss Water facility using a patented method that removes caffeine using only:

  • Filtered water

  • Heat

  • Time

No chemicals are ever used. The process works by:

  1. Steeping green coffee in water to dissolve caffeine.

  2. Filtering the caffeine out through carbon filtration.

  3. Reintroducing the green coffee extract (now caffeine-free) to fresh green coffee.

  4. Equalizing flavor compounds by diffusion until caffeine is removed but taste remains intact.
