Originally an avocado farm, El Vergel transitioned into a specialty coffee powerhouse, pioneering experimental processes that enhance both quality and complexity.
This lot undergoes an innovative 72-hour anaerobic fermentation using lixiviates (mosto)—a byproduct from Java coffee fermentation that enriches the coffee’s depth and character. After fermentation, the beans are meticulously dried in two stages: mechanical drying in silos for 2–4 days to prevent over-fermentation, followed by an 18-day sun drying phase to develop clarity and structure in the cup. A final 30-day stabilization in GrainPro bags ensures a clean, well-rounded profile.
